Vegan Coconut Ladoos

Ingredients
2 cups Coconut meat (freshly grated without the skin)
1 cup full fat Coconut Milk
¼ teaspoon Cardamom Powder
1 teaspoon Virgin Coconut Oil
¾ cup Castor Sugar or Jaggery (can adjust according to taste)
¼ cup Desiccated Coconut (for garnish)
Handful of Pistachios (for garnish)
Directions
- In a saucepan, add the coconut oil and lightly cook the coconut meat.
- Add the full fat coconut milk and sugar and let it cook for 20 mins, stirring often. Cook till the mixture thickens and the moisture evaporates.
- Add the cardamom powder and mix together. Turn off the heat and let it cool. The mixture should be thick enough to form balls.
- Roll the balls in the desiccated coconut and garnish with pistachios or cashews.
