Ingredients
- Vegetable Soup
1 Onion
Few cloves of Garlic
1 inch piece Ginger
Raw Potato (thin slices)
Salt and pepper to taste
- Momo Filling
1 Onion/Spring Onion
1 inch piece Ginger
Few cloves Garlic
Cabbage
Carrot (grated)
Few pieces Tofu (crumbled)
Salt
Pepper
Chilli
Coriander
- Momos
1 cup Rice Flour
⅓ cup Corn Flour
½ teaspoon Salt
2 teaspoon Oil
Water (to bind)
Directions
- Vegetable Soup
- In a large pot of boiling water add the onion, garlic, ginger, raw potato, salt and pepper. Let this cook for 30 mins.
- Then add thin slices of tomato, capsicum, carrot, cabbage, mushrooms, French beans, coriander and green chilli. Cover the pot and let this cook for at least an hour or longer.
- Once the vegetables become very soft you can strain them through a sieve and use the stock as the vegetable soup base.
- Momo Filling
- Finely chop onion, garlic, ginger, cabbage and carrot.
- Add salt to the chopped vegetables and mix well, let it sit for 10 mins.
- Then squeeze out all the excess water from the vegetables (this can go back into your soup).
- Now add the tofu, pepper and coriander. Adjust seasoning.
- Momos
- Mix the flours together with the salt and add the oil and little water to bind. The dough should be pliable. Let it sit for 30 mins.
- Oil the inside of the steamer. In a large pot add some water and place your steamer inside.
- Then roll out the momo dough and fill it with the stuffing and seal it from the edges.
- Place it in the steamer for 10 mins or till the momos are cooked.
Notes
- You can skip the vegetable soup preparation step and use a vegetable soup cube if you like.
- If you want to eat the momos as is you can do that with a sesame sauce dip or a chilli dip.
